Healthy Rainbow Roll Ups with Peanut Sauce

I’m in love with these Healthy Rainbow Roll Ups with Peanut Sauce for two reasons. 1.) They are delicious and 2.) They are so pretty! I wasn’t sure I was going to love the curry hummus that you spread inside the wrap, but it was actually super delicious. When you are eating healthy or just clean, it’s super important to play with the flavors to make your food more interesting. I found the yummiest coconut curry hummus at whole foods and will definitely be buying it just to dip my carrots in at home.

These healthy rainbow roll ups with peanut sauce are a definite crowd pleaser, I even made them for dinner once for me and my hubby. If you have a Vitamix, you can add the ingredients for the peanut dipping sauce to whip it up really fast. These are definitely going to be at the top of my recipe list to make for friends who are sick or just had a baby!

Healthy Rainbow Roll Ups with Peanut Sauce

Healthy Rainbow Roll

Ingredients

Healthy Rainbow Rolls

  • Carrots, sliced into matchsticks size
  • Cucumbers, sliced into matchsticks size
  • Red Cabbage
  • Curry Hummus (I used a coconut curry from Whole Foods)
  • Cooked Rice or Quinoa (optional)
  • Peanuts
  • Cilantro
  • Leaf of Collard Greens

Peanut Sauce

  • 3/4 C Peanut Butter
  • 1/4 C Soy Sauce
  • 1/4 C Rice Vinegar
  • 1/4 C Water
  • 2 T Honey
  • 1 Garlic Clove

Instructions

Prep:

  • Trim spine of collard leaf, but leave it thin and strong enough to roll

Roll:

  • Spread hummus on leaf and add in sliced veggies. Keep in center of leaf and fold down edges and roll back and fourth.

Peanut Sauce:

  • Add in all ingredients to blender or food processor. So Easy!

Notes

  • Wash collard leaf with hot water to make it easier to fold.
  • Add toothpicks to keep rolls intact!
  • The bigger the collard green leaf the better the wrap. The first time I made these I had huge leaves, but this time I had smaller leaves…and they definitely roll better with bigger leaves.

    I love the window you are sitting in front of. We are renovating our kitchen and adding a window and I love the dark casing. Is it white on the outside of your house or dark also. Do you know the brand? Love love it.

    Do you still do photography? You took my granddaughters pictures 8 years ago. I love those pictures so much.

      Thank you! These are custom metal windows, I have two this size and then one big triple one in front of my sink. They are handmade and insulated. Typically, metal windows are drafty and not energy efficient, but these have been fantastic and of course the look is what I’m most in love with! And of course I remember photographing your granddaughter years ago…I still run the studio full time 😉
